Mortar and pestle sets have been the rave of 2022 in the cooking world and this trend continues this year, with the ChefSofi mortar and pestle topping off the list of many kitchen tool review sites. First is to wash the kitchen tool with water and a brand new scrub that hasn’t been used to clean anything yet. While ChefSofi sets are relatively clean already because they’re washed with high-pressure water in the factory, SofiGOODs GmbH recommends rinsing and washing them too under running water before using.

Next is to air or sun-dry them for about 15-30 minutes. After drying, add about 1/3 cup of uncooked rice and two teaspoons of Kosher salt and grind this mixture using circular motions, ensuring it touches all surface area of the mortar and pestle’s interiors. After a few grinding and seeing specks of black or grit, discard the first go.

Redo this step until the mixture comes out with no grit or black specks. Clean the tool under cold running water to wash away the rice flour mixture then, air or sun-dry it again. Once dry, season it with garlic cloves, coarse salt, cumin seeds, and peppercorns, making sure all surface area of the tool is well-coated up to the rim. Rinse the tool using cold water, and notice how the insides of it are shinier compared with the first wash and after the rice flour rinsing.

Avoid washing the mortar and pestle with soap to prevent tainting food with cleanser ingredients and smell. “The purpose of choosing rice, garlic, etc. is to use different food types with different material strength, surface friction characteristics, and texture structure so that all graniteparticles of all sizes could go away through simple friction and gravity, or stickiness of the food like garlic,” said the company representative.

Budding chefs and expert cooks can also use their ChefSofi mortar and pestle for radically different flavors like cookies, candy, tea, or coffee. “You do not need to go with the garlic and the other ones. You can simply grind some cookies, for instance, and discard the first go just so that you make sure you are not going to consume the granite in your food,” added the representative.

The company also shares a rule of thumb from the book Alchemy of the Mortar & Pestle by D. & P. Gramp–when adding ingredients to a recipe, the driest ingredients go first, like dried herbs and spices, flour, etc. Next comes the moist ones like garlic, onion, brown sugar, fresh herbs, etc. The oily ones come next, like anchovy, nuts, oils, cheese, butter, etc. And then comes the wet ones like lemon juice, stock, vinegar, honey, soy, etc. Taste and add salt if needed.
